Among the polyunsaturated acids, linoleic acid is present in high quantities, along with oleic acid. The saturated fatty acids include palmitic acid and stearic acid. Other components found in sunflower oil are vitamin E, vitamin K, and phytosterols. Vitamin E helps protect against the effects of sun exposure, pollution, and ageing.
